

Curry Roasted Cauliflower With Quinoa

Method
1. In a mixing bowl, add the raw broccoli, cauliflower, yoghurt, half the curry powder, salt and pepper then mix in thoroughly.
2. Preheat the oven to 200/180fan degrees and place the marinated vegetables on a tray in the middle of the oven for approximately 20 minutes.
3. When the vegetables have 5 minutes remaining, place a pan on the hob on a medium heat, add the onion, garlic, dates and olive oil. Cook for 3 minutes.
4. Add the Quinoa, curry powder, salt and pepper and cook until hot all the way through. Remove the pan from the heat and add chopped coriander.

30g Dates Chopped
1/2tsp Olive Oil
1/4 Red Onion Diced
1 Clove Garlic Crushed
>Small Handful Coriander Chopped
2tsp Curry Powder
100g Alpro Simply Plain Yoghurt
5 Florets Cauliflower
5 Florets Broccoli
