Courgette with Avo Pesto & Chicken

Method

1. Preheat the oven to 220/200fan degrees. Place your chicken breasts on a tray lined with foil, spray with one cal oil and season with salt and pepper.

2. Place the chicken in the oven and cook for 20 minutes.

3. In a blender or food processor place your avocado, cashews, basil, lemon juice, olive oil and garlic. Blend until smooth.

4. When the chicken has 5 minutes remaining, place a pan on a high heat and add your courgette, cook for 2 minutes until slightly softened.

5. Remove from the heat and rest for 2 minutes. Then stir through the pesto mix and serve on a plate with the chicken sliced on top.

Handful of Basil

Juice of 1 Lemon

1tsp Olive Oil

1 Clove Garlic

250g Courgette Spiralised

200g Raw Chicken Breasts

Salt & Pepper

One Cal Oil Spray
