Protein Blueberry Seed Muffins

Method

1. Preheat oven to 180/160C Fan or Gas 4

2. Place 12 Muffin cases into a 12 hole muffin tray

3. Mash the banana in a bowl then add the eggs, yogurt, oil, apple sauce, Agave, Blueberries and vanilla extract, once mixed add a pinch of salt

4. In separate large bowl mix the protein powder, oats, flour, baking powder, bicarbonate of soda, cinnamon

5. Once the dry ingredients have been mixed together, pour the wet mixture into it and mix until you have a batter consistency (do not over mix as the muffins can become heavy)

6. Evenly pour the mixture into the 12 muffin cases, then sprinkle the muffins with the seeds & the extra oats 

7. Set timer and bake in the oven for 25 mins, until the muffins are cooked through and have risen well 

8. Remove from oven and place on a wire rack to cool down

50g Vanilla Protein Powder

50g Rolled Oats (and a extra ½ TBSP for sprinkling on top of the muffins)

200g Wholemeal Flour

1 ½ TSP Baking Powder

1 ½ TSP Bicarbonate Of Soda

1 ½ TSP Cinnamon

9g Pumpkin Seeds

9g Sunflower Seeds

100g Blueberries 

4 TBSP Agave Syrup

2 Large Eggs

200ml Natural low-fat yogurt

50ml Rapeseed Oil

100g Apple Sauce

70g Ripe Banana

1 TSP Vanilla Extract
