Method

1. Put the peanut butter in a small bowl and stir in 3 tbsp of just-boiled water until smooth. 

2. Add the chilli sauce and lime juice, and mix well. Put to one side. 

3. Cut the chicken breasts into thin slices and place the chicken slices on the lettuce.

4. Chop the carrot, Cucumber & Spring Onions into thin match sticks.

5. Then evenly place the carrots, cucumber and spring onions on top of the chicken cups.

6. Once you have put the veggies and the chicken pour over the peanut sauce and enjoy.

Ingredients

220g Chicken Breast Fillets (pre cooked)

3 TBS Peanut Butter (Smooth or Crunchy)

1 TBSP Sweet Chilli Sauce

½ Lime (Juice only)

100 Baby Gem Lettuce

2 Spring Onions

60g Cucumber

1 Medium Carrot

3 TBSP boiled water
