Greek Baked Cod

Method
1. Heat oven to 200C/180C fan/gas 6.
2. Tip the potatoes, onion, garlic, oregano and olive oil into a roasting tin.
3. Season with salt and pepper and mix together with your hands to coat everything in the olive oil.
4. Roast for 15 mins, then turn everything over and bake for another 15 mins.
5. Now add the cod, lemon and tomatoes, and roast for 20 mins
6. Serve with 100g green beans, and sprinkle the parsley over the top of the fish.

2 Cod Fillets (130g)
1 Onion
2 Garlic Cloves
400g Potato
2TBSP Olive Oil
1 TSP Oregano
2 Large Tomatoes
5 Sprigs Parsley or 1 TBSP Parsley
200g Green Beans
