Lemon, Raspberry & Blueberry Sorbet

Method

1. Add the frozen blueberries & raspberries to a food processor.

2. Followed by the honey, lemon zest, lemon juice, and the water.

3. Process the mixture until the blueberries become crumbly, pressing down the mixture with a spatula as needed.

4. Continue to process until the mixture becomes more smooth and evenly processed.

5. Once everything is smooth, taste for sweetness, and add additional honey (1 TBSP) if needed.

6. You can serve this sorbet immediately or transfer it to an air-tight container and freeze for a couple hours for a harder consistency.

7. Once served, garnish with two mint leaves.

130g Frozen Blueberries

100g Frozen Raspberries

2 TBSP Honey 

3 TBSP Lemon Juice 

1 TSP Lemon Zest 

43ml Water

2 Mint leaves per serving to decorate
