Corn Cakes, with Avocado, Hummus, Rocket, Spring Onions & Chicken

Method
1. Lay the corn cakes on a chopping board.
2. Spread the hummus over the corn cakes.
3. Add the sliced avocado, followed by the sliced chicken.
4. Sprinkle the spring onions on top, then place the corn cakes on a plate.
5. Add the rocket in the center of the plate and serve.
6. Season with Salt and Pepper to taste.
