Piri Piri Chicken with Mexican Rice

Method
1. Heat a non stick frying pan with a few sprays of 1 kcal spray.
2. Coat the chicken with the spices.
3. Add the chicken to the pan, and cook until there is no more pink left in the chicken.
4. Place the rice in the microwave and cook as instructed.
5. In a food processor add the lettuce and shred.
6. Take the chicken off the heat and set aside.
7. Add the Rice and lettuce to a large bowl and mix through.
8. Top the rice and lettuce with the chicken and enjoy.

150g Chicken Breast (diced or cut into strips)
125g Spicy Mexican Bean Rice
5g Piri Piri Seasoning
5g Chicken Seasoning
2 Cups Shredded Lettuce
