Lemon Protein Cake

Method
1. Pre heat oven to 180/160fan celcius.
2. Mix Oat Flour, Protein Powder, Baking Powder and Cinnamon in a mixing bowl.
3. In a seperate bowl mix the 2 Eggs, Greek Yoghurt, Stevia, Agave Syrup, Lemon Juice, Coconut Oil and Lemon Zest.
4. Combine wet and dry ingredients together, mix to create a smooth batter.
5. Line a 4x8 loaf pan with baking paper. Line paper with coconut oil to prevent sticking.
6. Bake for 25 Minutes.
7. Leave cake to cool and then serve.

120g Oat Flour (Blended up rolled oats)
30g Vanilla Protein Powder
1tsp Baking Powder
2tbsp Coconut Oil
1 Large Lemon (Squeezed)
115g Alpro Vanilla Yoghurt
30g Stevia or (Sweetener of choice)
30g Agave Nectar Syrup
Zest of a Lemon
2 Whole Eggs
Half Tsp Cinnamon
