Method

1. Heat a pan on the hob on a medium/high heat and add a few sprays of oil. Score the skin of each sea bass fillet 3 times.

2. Season the fish skin with salt and place in the pan skin down, cook until golden brown (approx 5 mins).

3. Heat a second pan on the hob to a medium heat and add the stir fry veg with some oil spray and cook for 3 to 4 minutes until cooked but still crunchy.

4. Once the fish has cooked on the skin side, turn over and cook on the skin side for 1 minute.

5. Remove the veg from the pan and place on your plate with the fish fillets over the top skin side up to rest.

6. In the fish pan, add a couple more sprays of the oil and add the garlic, ginger and chilli and cook for 2 minutes.

7. Take the mix off the heat, add the spring onion and soy, stir through then spoon over the fish.

8. Add the crushed cashews over the top at the end and serve.

1 Garlic Clove Finely Sliced

1 Spring Onion Finely Shredded

1tsp Dark Soy Sauce

2 Sea Bass Fillets

1/2 Pack Of Stir Fry Veg

20g Raw Cashews Crushed

Salt

1 Cal Oil Spray
