Baked Stuffed Pepper Starter

Per Serving: As a starter 200kcal P: 15g C: 15g F: 8g As a main 392kcal P: 29 C: 30 F: 17

Method

1. Preheat the oven to 200C/180C fan.

2. Chop the pepper in half and deseed.

3. Stuff the halves with the Tofu, and then tuck the chopped cherry tom’s into the tofu.

4. Spray with one cal spray and season with salt & black pepper.

5. Place in the oven and cook for 50 minutes.

6. Take out the peppers, then add the chopped olives, sprinkle the parsley & chives on top and serve straight away.

1 Large Red Bell Pepper (cut in half)

150g Tofu (I used Silken & Smooth)

42g Cherry Tomatoes (cut into quarters)

4 Green Olives (chopped into quarters)

TBSP Chives (chopped)

Bunch of Leaves Parsley (chopped)

8 Sprays 1 kcal Spray
