

Chicken & Chorizo Ragu

Method
1. Heat a large non stick frying pan or flameproof casserole dish.
2. Add the Chorizo and cook for 5 minutes, until it releases its oil.
3. Add the onion and cook for a further 5 minutes, until softened.
4. Then add the garlic and cook for 2 minutes, before adding the smoked paprika and sundried tomatoes.
5. Add the chicken, and cook for 2 minutes until sealed on both sides.
6. Now pour in the chopped tomatoes and chicken stock.
7. Turn down the heat and cook for 30 mins.
8. Once the sauce has thickened after 30 mins, stir through the lemon juice and remove from the heat.
9. Serve with a salad, and a flatbread to dip in the sauce. Yummy 🙂

110g Reduced Fat Chorizo, sliced
600g Chicken Breast, cut into strips
1 Small Onion, chopped
2 Garlic, minced
1 TSP Smoked Paprika
400g Tinned Chopped Tomatoes
100ml Chicken Stock
1 Lemon Juice
80g Sundried Tomatoes, halved
4 Sainsburys Wholemeal Flatbread
1 Cup Salad
