Method

Method:

1. Bring a pan of water to boil point, and add the sausages. Boil for 5 minutes.

2. Bring another pan of water to boil for the pasta, and cook as directed on the package.

3. Heat a large frying pan/stock pot with the olive oil.

4. Add the Onions & Garlic with a pinch of salt and cook for 2 - 3 minutes.

5. Now add the tinned tomatoes, and stir through. Turn down to a low heat.

6. Drain the sausages, and peel off the skin.

7. Chop the sausages into chunks, and add them to the onions, garlic & tomatoes.

8. Turn the heat up to medium, and let simmer for 5 minutes.

9. Add the spinach and the cheese, and stir through until the spinach has wilted. 

10. Drain the pasta and serve into the 4 bowls, followed by the sausage & tomato sauce.

100g Spinach

2 x 400g Chopped Tin Tomatoes

½ TBSP Olive Oil

20g Parmesan Cheese

300g Dry Fusilli Pasta
