Chicken Tikka Skewers

Method

1. Mix the yogurt and curry paste together in a bowl.

2. Then add the cubed chicken (marinate for an hr for or over night for the best flavour). 

3. Shake off any excess marinade, then thread the chicken pieces and cherry tomatoes onto the skewers. 

4. Cook the chicken skewers under a medium grill for 15-20 mins, turning throughout until they are cooked all the way through.

5. Place the both jacket potatoes in the microwave for 9 minutes when you have 10 minutes left for the chicken.

6. Place the salad on a plate.

7. Remove the chicken skewers and place them next to the salad.

8. Take out the jacket potatoes, cut a cross at the top and place on the plate

9. Add to the butter to the jacket potato, and serve.

For The Chicken & Marinade

74g 0% Total Greek Yogurt

36g Curry Paste (I used Sainsbury’s Tikka Paste)

300g Chicken Breast (150g per person, cut into cubes or pre cut)

Side:

2 Frozen Jacket Potatoes (200g each)

2 Cups Mixed Salad Greens

60g Cucumber (Cut into quarters or halves)

100g Cherry Tomatoes
