Fiorentina Pizzas

Method
1. Heat oven to 200C/180C fan/gas 6.
2. Place the spinach in a colander and pour over boiling water to wilt.
3. Leave to cool a little, then squeeze out any excess water.
4. Place the flatbreads on a baking sheet or tinfoil.
5. Then arrange the spinach over the top, leaving space in the middle for the egg.
6. Season each with a pinch of nutmeg and salt.
7. Break an egg into the centre of each flatbread, then sprinkle over the cheese and season with black pepper.
8. Bake in the oven for 10 mins.
9. Add the torn prosciutto just before serving, and serve with a side salad.

2 Sainsbury’s Greek Style Flatbread
2 eggs
20g gruyère (grated)
30g Eatlean cheese (grated)
60g Prosciutto Ham Slices (torn)
Pinch of Nutmeg
