

Gnocchi Tomato & Basil Bake

Method
1. Heat grill to high.
2. Heat 1 tbsp olive oil in a large frying pan, and add the onion and red pepper and cook for 5 mins.
3. Then stir in garlic and cook for another 1 min.
4. Tip in 400g chopped tomatoes and 500g gnocchi, and bring to a simmer.
5. Let it bubble for 10-15 mins, stirring occasionally, until the gnocchi is soft and the sauce has thickened.
6. Season with salt and black pepper and stir through basil.
7. Transfer to a ovenproof dish.
8. Scatter the sliced mozzarella and grill for 5 - 10 minutes until the cheese is turns to a golden colour.
9. Serve with a side salad and 100g cooked Chicken OR 150g Quorn Chicken Pieces.
Ingredients
500g Gnocchi
1 TBSP Olive Oil
½ Chopped Onion
1 Chopped Red Pepper
1 Garlic Clove
400g Chopped Tinned Tomatoes
Handful of chopped Basil
30g Eatlean Protein Cheese Shaker (their own version of parmesan cheese)
150g Low Fat Mozzarella
