Herb Crusted Haddock with Sweet Potato Fries

Method

1. Heat oven to 220C/fan 200C/gas 7. 

2. Bring a pan of water to boil.

3. Peel and cut the sweet potato into slices (chip shape).

4. Then place the cut sweet potato into the water and part boil for 5 minutes.

5. Whilst the sweet potato is boiling, start preparing the Haddock.

6. Lightly oil a large baking tray, then lay the haddock and tomatoes alongside each other. 

7. In a small bowl, mix the mayonnaise with the garlic paste or crushed garlic, then spread evenly over the fish.

8. In a separate bowl, toss together the breadcrumbs, lemon zest, juice and parsley, and season to taste. 

9. Top the fish with the breadcrumb mixture, then drizzle olive oil over the fish and spray the sweet potato with 1 Cal Spray.

10. Put the sweet potatoes on the try with the Haddock and bake for 25 mins.

11. Serve with a side salad and a wedge of lemon.

1/2 tbsp olive oil

2 skinless unsmoked haddock fillets 140g each

10 Cherry Tomatoes

20g Lighter Than Light Mayonnaise

1/2 TSP Garlic paste

30g Breadcrumbs

1/2 Lemon for zest & juice 

1 handfuls flat-leaf chopped parsley

300g Sweet Potato (150g per person)
