

Jacket Sweet Potato With Chicken And Chorizo

Method
1. Stab the sweet potato with a fork a few times then wrap in wet kitchen paper.
2. Place on a plate and in the microwave and cook on full power for 4 minutes.
3. Whilst cooking, place a pan on the hob on a high heat and add the chorizo.
4. Cook the chorizo for 2 minutes until crispy then add the chicken and cook for a further minute until warm.
5. Remove the sweet potato and check to see if it is soft. Return to the microwave for a few more minutes if not.
6. On a plate, slice open the potato, fill with the chicken and chorizo mix and then place the mozzarella on top.
7. Place back in the microwave for 30 seconds longer or until the cheese has melted.
8. Serve with a salad.

100g Sliced Cooked Chicken Breast
20g Sliced Chorizo
20g Sliced Low Fat Mozzarella
