Jacket Sweet Potato With Tuna

Method
1. Stab the sweet potato with a fork a few times then wrap in wet kitchen paper.
2. Place on a plate and in the microwave and cook on full power for 4 minutes or until soft.
3. In a bowl, mix the tuna, feta, red onion and vinaigrette.
4. Remove the potato once cooked, slice in half and add the tuna mix.
5. Serve with a salad.
Ingredients
1 Roughly 150g Sweet Potato
1 Tin Of Tuna In Spring Water Drained
20g Feta Cubed
1/4 Finely Diced Onion
15g Tesco healthy living French vinaigrette dressing (or equivalent)
Serve With Salad
