

Jam Doughnuts

Method
1. Preheat oven to 180C and prep a muffin tin (or dome dessert mould).
2. Sieve flour, protein powder, sweetener, baking powder and bicarb into a mixing bowl and whisk to avoid clumping.
3. Add yoghurt, egg white and vanilla essence and stir to create your dough.
4. Spoon mixture equally into 5 domes and place in the oven for 8-10 minutes or until cooked, then remove to cool.
5. While doughnuts are cooling, add raspberries and sweetener to a small ramekin and place in the microwave for 35-40 seconds, then stir to create your jam.
6. Once doughnuts have cooled and you’ve made your jam, cut into your donut with a knife to create a pocket, then pipe (or spoon) jam into the middle of your doughnut.
Ingredients
Doughnuts:
50g Flour
30g Vanilla Protein Powder
2 Tbs Sweetener
3g Baking Powder
2g B-iCarb Soda
150g Low Fat Greek Yoghurt
1 Egg White (approx 40g)
3ml Vanilla Essence
1Kcal Spray (2 sprays per mould, get a basting brush and cover all of the mould)
Filling:
50g Frozen Raspberries
1 Tbs Sweetener
