Piri Piri Chicken with Smashed Sweet Potato

Method

1. Pre heat the oven 180C/160C Fan/Gas 4

2. Bring a pan of water to boil.

3. Add the sweet potato chunks and part boil for 10 mins.

4. Drain the sweet potato chunks and pour them into the roasting tray.

5. Spray the sweet potato with 1 kcal spray and season with salt and pepper.

6. In a bowl, mix together the chicken, piri piri seasoning and red onion.

7. Spray a few sprays of one cal spray into the bowl with the chicken and mix again.

8. Add the contents of the bowl into the roasting tray.

9. Roast for 40 minutes. 

10. Half way through (20 minutes) take out the roasting tray and stir the chicken then stir the sweet potatoes (keeping them separate from each other) and add the tenderstem broccoli to the roasting tray, spray with a few sprays of one cal spray and return to the oven.

11. Remove the Chicken, some of the onions and the tenderstem broccoli from the roasting tray, leaving the sweet potatoes in the tin.

12. With a fork/masher mash the sweet potatoes, including the leftover juice from the chicken and some of the onions.

12. Spread the sweet potato around the roasting tray, then add the chicken, onions and broccoli on top and serve in the roasting tray.

300g Chicken Breast Fillets

1 Chopped Red Onion

25g Piri Piri Seasoning

200g Tenderstem Broccoli 

1 Kcal Spray
