Method

1. pre-heat the oven to 200/180fan degrees and place the tomatoes in to the oven on a pan. A cook for 10 minutes.

2. In a bowl whisk together the whole egg and egg whites with salt and pepper.

3. Heat a pan on the hob to a medium heat.

4.Place the crumpet into the toaster and toast. Spray some oil into the pan once the crumpet begins.

5. Add the eggs, stir regularly and cook until the eggs have scrambled but still look a bit wet.

6. Place the eggs on the crumpet and serve with the tomatoes.

1 Crumpet

A Handful of Cherry Tomatoes

Salt and Pepper

One Cal Spray Oil
