Method

1. Pre heat oven to 180c/200fan.

2. Place chicken in to oven.

2. Place chopped med veg onto a baking tray, spray veg with 1kcal.

3. Season veg with salt and pepper.

4. Place veg into the oven 10 minutes after the Chicken.

5. Cook for 15 minutes.

6. Boil New potatoes/Rice whilst the chicken and vegetables are cooking.

7. Place food onto a plate and dress with balsamic vinegar.

Ingredients

200g Mediterranean Style Vegetables (Peppers/Courgettes/Red Onion/Cherry Tomatoes)

150g Uncooked Chicken (125g Quorn Chicken Pieces)

15g Balsamic Vinegar

Salt & Pepper

Serve with a 100g Cooked Rice or 150g New Potatoes
