Steak & Broccoli Bowls

Method

1. Put the rice mix into a bowl and stir in the ginger, the green of the spring onions and 4 tbsp water. 

2. Add the broccoli and the spring onion whites.

3. Keep the whites of the spring onions together and on top, as you will need them in the next step. 

4. Cover with cling film, pierce with the tip of a knife and microwave for 5 mins.

5. Meanwhile heat a non-stick frying pan and sear the steak for 2 mins each side and set aside (If you would like the steak less pink keep in the frying pan for 4 minutes).

6. Take the onion whites from the bowl and add to the pan so they char a little in the meat juices while the steak rests.

7. Tip the rice mix into two bowls. 

8. Slice the steak, pile the charred onions on top and enjoy.

250g steam wholegrain rice (125g per person)

2 TBSP Sushi Ginger (chopped, I used the Yutaka brand)

4 Spring Onions (greens chopped & whites sliced into matchsticks)

160g Broccoli Florets (cut into bite size pieces)

225g Extra Lean Beef Medallion Steaks (I used Sainsbury’s)
