Super Quick Veggie Chilli & Rice

Method

1. Pre heat the oven to 200C/180C Fan/Gas 6.

2. Place the veggies in an oven proof dish and cook for 15 minutes.

3. Add the tinned tomatoes and beans to the veggies.

4. Cook for a further 15 minutes.

5. When there is 2 minutes left with the veggies, place the rice in the microwave for 2 minutes.

6. Place half the rice into the bowls and then add the veggies on top. If you are topping your chilli with Eatlean Cheese, use a citrus grater to grate your cheese. Serve with a side salad.

1 Pack Mix Veggies (420g)

1 Pack Tilda Rice (I used Tilda Firecracker Rice)

1 Can Chopped Tomatoes

1 Can Five Beans (In a hot & spicy sauce)

20g Eatlean Cheese Grated (Optional)
