

Vegan Kebabs With Mint Dressing

Method
1. Pre heat grill on too hot or cook on a BBQ.
2. Cut all ingredients into chunks as listed above.
3. Make the marinade by mixing olive oil, lemon and raw el hanout together in a separate bowl.
4. Layer each item onto the skewers applying evenly over three skewers.
5. Dress the skewers with the dressing using a pastry brush.
6. Put skewers under the grill for 5 minutes.
7. Finally dice mint leaves and mix with the yoghurt to make a dressing to serve with the skewers.

1 Peach Cut Into Three Chunks
3 Mushrooms Cut In Half
50g Tofu Cut Into Three Chunks
Half A Red Onion Cut Into Three Chunks
Half A Courgette Cut Into 6 Chunks
5g Olive Oil
Half A Lemon Squeezed
1TBSP Ras El Hanout Seasoning
100g Alpro Simply Plain Yoghurt
Bunch Of Mint Leaves
Serve With Mixed Green Salad Leaves
