VK Chicken Casserole

Method

Use a heavy Casserole pan on the hob, put on a medium heat. Spray 3 sprays of cal spray and fry the onion for 5 mins.

Add a clove of garlic crushed and peel/chop the chorizo and cook with the onion.

Add a couple of sprigs of fresh thyme, add the smoked paprika and stir through.

Then add the passata, stock and tomato puree.

Bring up to a simmer and add the chicken. Once the chicken is added put the lid on the Casserole dish and cook over a very low heat for 1 hour.

10 mins before serving up, chop up the peppers small and add them to the Casserole and cook for the remaining 10 mins.

Cook your Broccoli.

Once cooked serve up your Casserole with your Broccoli, season as you wish and sprinkle with a garnish of fresh flat leaf parsley!

100g Chicken breast

1 onion

100g Tomato Passata

50g Chorizo

1 tbs Smoked paprika

1 knorr chicken stock cube. (Dissolve in 100ml of hot water)

1 tbs Tomato puree

Half Red Pepper

Half Green Pepper

100g Broccoli

Sprigs of fresh thyme

Handful of fresh flat leaf Parsley

Clove of garlic
